  9. Divide the cheddar among the cups, and then top with the remaining batter.
  10. Bake the popovers for 15 minutes.
  11. Then reduce the heat to 350°F and bake for 10 minutes.
  12. Remove the muffin tin from the oven and unmold the popovers onto a wire rack.
  13. Pierce the side of each popover with a small sharp knife to allow steam to escape. (This will help keep them from deflating.)
  14. Serve immediately.
  15. DO NOT open the oven until the popovers are finished. Leave them in until the last moment to be sure the inside is cooked.
  16. Ready to serve and ENJOY!
