  9. remove pan from oven; cover with foil; place on stovetop to rest
  10. increase oven temperature to 500°F
  11. when oven reaches 500°F remove foil and place pan in oven; immediately reduce temperature to 450°F and bake for 12 to 15 minutes
  12. have serving platter ready. when the pancake is done invert it on platter
