Instructions to make Pumpkin Pancake:
  1. For pancake - in a bowl add milk and apple cider vinegar. Mix, let it curdle within 5-10 mins. Set aside
  2. In a mixing bowl add pumpkin purée, curdled milk, coconut sugar and whisk well
  3. Add spelt flour slowly, add pumpkin spice powder, salt, baking powder, baking soda, whisk and set aside for 5 mins covered
  4. Pumpkin Spice powder - in a bowl add 2 Tbsp cinnamon powder, 1 tsp ginger powder, 1 tsp cloves powder, 1 tsp Allspice powder, 1 tsp nutmeg powder. Mix
  5. Pumpkin puree - wash the pumpkin, peel, cut into small pieces. In a wok heat 1 Tbsp oil and fry the pumpkin pieces on low flame 2-3 mins each side. Once browned, set aside to cool. Add to a blender and blend smooth. Pumpkin purée is ready to use for your various dishes. Can be refrigerated for a week in airtight container
  6. In a wok on medium flame grease and pour a ladle, let bubbles surface, edges should fry, for 2 mins, flip and cook. Set aside
  7. Complete the batch.
  8. Plate with fruits of your choice and enjoy a healthy breakfast or brunch
