We absolutely love the nutty flavor of the flour! I use wheat flour for pancakes. Atta is (comparatively) unrefined whole meal wheat flour. The grains are cleaned and stone-ground into a slightly coarser powder.

Instructions to make Wheat flour pancake / atta pancake:
  1. Mix wheat flour and rice flour. Keep aside. In a heavy bottomed pan mix jaggery and little water. Bring it boil and cook till all the jaggery is fully melted. Sieve it in another bowl and let it cool. In another bowl mix tutti fruity and coconut powder. Keep aside.
  2. Now mix jaggery water in wheat flour mixture. Add water little by little. Mix well to a smooth batter. Consistency of the batter should be normal. Add vanilla essence and mix well.
  3. Heat tawa. Pour a ladlefull of batter on it and spread it gently. Drizzle little oil on sides and cook on slow. Flip the side again drizzle little oil and cook till golden.
  4. Place it in plate and put a spoonfull of coconut mixture on the pancake and roll it softly.
  5. Place it in serving plate and serve.
