  5. Cover and leave the mixture to stand for at least 10 minutes. This helps to make a fluffier pancake.
  6. To cook the pancakes melt more butter in a frying pan, just enough to cover the base of the pan and place roughly 3 tbsp of mixture into the pan. (I have a large serving spoon which I usually use instead, pictured).
  7. Smooth the mixture into a circle filling in any gaps about 10 cm across. Leave in the pan until the edges of the pancake are starting to bubble and create air pockets (this take 3-5 minutes). Then flip the pancake to cook the other side (this takes another 3-5 minutes). Remove the cooked pancake from the pan and set aside.
  8. Repeat steps 6 and 7 until all the pancake mixture is gone.
  9. Recommended serving of 3 pancakes per adult. I personally love this with some cinnamon and golden syrup or with fruit and yoghurt. But personalise and find your favourite flavours
