Instructions to make Banana Coconut Malpua or Pancake:
  1. To make sugar syrup, add water and sugar in a pan or wok. Boil till sugar dissolves and reaches 1 string consistency.Add crushed cardamoms and simmer for few minutes.Few strands of saffron may be added to make it more flavourful. Set aside.
  2. In a bowl add the flour,grated coconut,mashed banana,pinch of salt,semolina,curd,baking powder,raisins,crushed cardamoms and fennel seeds.Gradually add milk to make a thick batter of pouring consistency and whisk well to get a lump free texture.Cover and allow it to rest for 20 minutes.
  3. Heat oil or ghee in a frying pan and pour a ladle full of batter and deep fry round pancakes in medium flame.Flip the malpua once one side is golden brown.
  4. Remove from oil and dip the malpuas in warm sugar syrup.Let it soak for 10 minutes then spread it on a plate.Drizzle some sugar syrup over them and serve garnished with chopped nuts or rabri.
  5. Ready to serve and ENJOY!
