  1. Beat eggs in a bowl. Add sugar and honey and mix well with a whisk. Dissolve the baking soda in 2 tablespoons of water and add to the bowl.
  2. Add cake flour to the bowl. Use a spatula to cut the batter from the bottom.
  3. Cover with cling film and rest the mixture for 30 minutes at room temperature.
  4. Add water to adjust the batter consistency.
  5. Heat an electric griddle to 355ºF/180ºC and spread a wet cloth to cool. Set the electric griddle at 320ºF/160ºC and pour in the batter to form circles. Flip over when the surface is full of bubbles.
  6. Flip over and press the edge of the pancakes lightly with a spatula to shape the pancakes nicely. It only takes 10-20 seconds to cook this side.
  7. Cover the pancakes with a damp cloth to prevent drying out and to keep them nice and moist.
  8. Smear the adzuki beans in the centre of a pancake. Sandwich with another pancake on top, wrap in cling film and you're done.
