  1. In a large jug, whisk together the flour,sugar,baking powder,baking soda, egg and buttermilk until thick, smooth batter forms. Set aside to rest for 20 - 30 minutes.
  2. Preheat a heavy frypan and add 1 teaspoon of the butter. Cook large spoonsful of the batter until the pancakes are bubbling and aerated. Flip the pancakes and cook them until they are golden and puffed. Set the pancakes aside on a warm tray or in low oven and repeat with remaining batter and butter.
  3. Heat a separate frypan and cook the bacon for 2-3 minutes until bacon start to crisp, then add the banana slices. Sprinkle over the cinnamon and sear the bananas are golden. Add the maple syrup and heat through.
  4. Stack 2-3 pancakes on each plate and top them with the bacon rashers and banana and dizzle over hot maple syrup.
